No Egg Recipes

The price of eggs is sky high around here as they say there is a shortage of eggs. So I did some researching and found this old recipe that my Grandma used to make. I thought I would share it with you. I won't be baking today but no doubt one of these days I will do one of these recipes.

Eggless, Butterless, Milkless Cake

1 cup brown sugar
1 cup raisins
1 cup water
1/2 cup lard (shortening in my case)
1/2 tsp. salt
1/2 tsp. cloves
1 tsp. cinnamon
1/2 tsp nutmeg
1 tsp. soda
2 cups (rounded) flour
1 tsp. baking powder

Combine sugar, raisins, water, lard, salt, cloves, cinnamon and nutmeg in pan and boil for 3 minutes. Remove from heat and cool. Add soda dissolved in a little warm water. Add flour and baking powder sifted together. Pour into greased 9 x 13 pan. Bake at 375 degrees for 30 minutes. Yield: 12 servings but one can make them any size you want. I make them smaller due to the high carb content of raisins.

Also here is another one that is good that a friend reminded me of and I used to make this one a lot when the family was home..

Crazy Cake

3 cups flour
1/3 cup cocoa
1 tsp. salt
2 cups sugar
2 tsp. soda
Mix the above together by hand.

Add:
3/4 cup oil
2 cups cold water
2 tsp. vinegar
1 tsp. vanilla

Mix by hand. Do not use an electric mixer. Do not grease a 9 x 13 pan and bake at 350 degrees for 30-35 minutes.

Oh, geez, now you tell me, Verna! Last week I made an egg bake with a dozen eggs! Yikes! So thank you for the EBM cake! I have that Crazy Cake recipe and make it often. It's so moist and chocolatey! I'm going to check back and see what other recipes people share. Take care! Hugs, Darnell

Hmmm - can't think of any at the moment, but as I tend to be frugal, I am sure I have some egg free recipes - I think one may be a fruit cake... will have to go and look it up and pop back tomorrow

You are so thoughtful and I love that you shared it this way. I was not able to get eggs on my last shopping trip. Going tomorrow and hope that I can score me some eggs. If not, this is a good alternative. Stay safe.

Eggless Honey Fruit Cake
8 oz Butter 1 lb flour
1 cup honey 2 tablespoons Golden syrup
1 cup milk 1 teaspn Bicarbonate of Soda
1 teasp almond essence 2 1/2 lb mixed Fruit( lightly
floured)
Preheat oven to 400 oF
Rub butter into the sifted flour.
Warm Honey and Golden Syrup together, add to the crumbed mixture
Bring milk to the boil add soda and mix into the main mixture
Cool
Add almond essence and mixed fruit
Mix well and pour into greased 8"-9" tin
Place cake into the oven, and turn down to 300 oF for an hour, then 250 oF for a further 1 1/2 hours
Makes a moist cake that definitely improves with keeping - if it's possible to keep it!

Gosh, thank you, Verna! I've bookmarked this post so I can refer back to it. Already one new recipe added! I think eggs are regular price here and we've always managed to get them, if not at one store, then another, but we try to be frugal with our use of them. These recipes are great!

Thanks for the recipes! I found this one among some old recipes from my great aunt. I haven't tried it, yet, but it sounds yummy.

Baked Fudge Dessert
Sift together 1 cup flour, 2 tsp baking powder, 1/2 tsp salt, 1/2 cup sugar and 3 Tbsp cocoa. Make a well in the center and add 1/2 cup milk, 1 tsp vanilla and 2 Tbsp oil. Stir just until blended and pour into a greased 1 1/2 quart casserole dish.
Sauce: Mix together 4 Tbsp cocoa, 1 1/2 cup brown sugar, 1 3/4 cups hot water and 1 tsp grated orange rind and beat well. Pour over batter and bake at 350F until done.
As the dessert bakes, the batter will rise through the rich chocolate sauce. Serve it hot with whipped cream or vanilla ice cream.

I have made the Crazy Cake too for many years and love it. My daughter is a vegan so she can enjoy this recipe too. I have also made a yellow version--- I omitted the cocoa but added that amount more of flour & added 2 tsp of vanilla extract. It was so moist & yummy & is my go to yellow cake now.
